Local coffee from wild plants - the ingredients.

KRUUT has chosen a mixture of local superfoods such as beechnuts, chicory root, dandelion root and the medicinal mushroom Chaga.

An introduction to their wild ingredients:

// Beechnuts

They remain unnoticed on the path in the fall. There is a lot in the fruit of the common beech tree. In times of need, the square fruits saved people and animals in times of famine. Because beechnuts have a fat content of 40 percent. We also find iron and zinc here. And 6.4 grams of protein per 100 grams! The fagin it contains, however, is toxic to humans. So it's better not to eat beechnuts raw. However, since fagin is destroyed by heat, we can roast the beechnuts, scald them with water or grind them into flour.

// Waywait

In times of need, their roots were roasted with barley and rye, ground and infused into coffee. It is one of the chicory plants. Not long ago, people accidentally bred the first chicory and radicchio from it. The bitter substances it contains help with digestive problems and loss of appetite. Inulin is great food for our intestinal bacteria. This inulin is also what tastes like coffee when roasted. In herbal medicine we find it as a tea for liver and digestive problems.

// Dandelion root

We usually only use the striking leaves of the plant in salads and tea. But the root also has great active ingredients. Depending on the season and part of the plant, the plant contains different doses of vitamin C, bitter and tannins, iron and silica. Dandelion is therefore used as a blood purifier, dehydrator and digestive aid. We dig up the white root in spring before flowering or in autumn. We can eat them raw or processed.

// Chaga

The Chaga mushroom grows on old, dead trees. He likes cold areas. After harvesting, it is dried and ground. The adaptogen adapts to the needs of our body. The polysaccharides it contains are energy stores and components of proteins and thus support our immune system. Triterpenes have anti-inflammatory and antiviral effects. Like wild herbs, it contains vitamins, minerals and trace elements. The mushroom has a strong antioxidant effect and increases our general well-being. The melanin it contains has a beneficial effect on the skin and our immune system. Last but not least, it also provides us with B vitamins.
